Chervil is used at the last stage of cooking and enhances the flavor of many vegetables as well as some meats and baked fish. It is also great for flavoring cheese. Likewise, it can be used to make a vinaigrette with its leaves macerated in white wine vinegar. Together with tarragon and chives it forms the combination known as “fines herbes,” which is used to flavor omelets and other dishes.
